Now she wants a butter an egg man
From way out in the west
She wants somebody who’s workin’ all day
So she’s got money when she wants to play
Now pretty clothes they’ll never be mine
But what she told me the other day
I hope she don’t change her mind
Now she wants a butter an egg man
A great big butter and egg man
From way down South
“Big Butter and Egg Man” by Louis Armstrong

Alright, back to the recipes…butter and radish sandwiches make a wonderfully classic, simple treat. Most of the geeky chef literature that I have read mentions this combo (buttered radishes) as a late-night favorite for cooks. This sandwich is great as an appetizer or with a small salad for lunch. Buy good radishes that are nice and peppery, this spiciness is the flavor that pairs so well with the butter.
Ingredients:
Radishes, thinly sliced
French baguette, cut into ½ inch slices
Butter (lots)
Fleur de sel (or just use salted butter)
Directions:
1. Butter bread
2. Place sliced radishes on butter
3. Season with salt

Radishes always look fantastic on a plate. I remember my old classmate was on “The Next Iron Chef” on the Food Network (Chef Gavin Kaysen) and he made this dish with paper thin radishes that looked unreal.
I can’t say I’ve come around to enjoying their flavor though. The sandwich looks great though, I could go for one right now.
