Continuing with the swine time theme, I introduce to you my recipe for pork dumplings. These were really great, my only advice is to make sure that the dumplings are not touching when they are steaming. If you do not heed my warning you will have one huge dumpling, which may or may not have happened to me on my first attempt. You may be asking, isn’t one gi-normous dumpling delicious? Yes, but let me tell you, it is really hard to dunk in the sauce.
Pork dumplings
Ingredients:
100 wonton wrappers (I only used 50 and froze half of the pork filling)
1 pound ground pork
1 tablespoon fresh ginger, minced
2 cloves garlic, minced
1 green onion, thinly sliced
2 tablespoons soy sauce
1 tablespoons sesame oil
¼ teaspoon white pepper
1 egg, beaten
2 cups finely shredded green cabbage
Directions:
1. In a large bowl, combine all of the ingredients (except wrappers)
2. Place 1 teaspoon of pork filling onto each wonton wrapper
3. Moisten edges with water and fold wrapper corner to corner to form a triangle and bring to corners in to form a crown
4. Firmly press down edges to ensure there is no extra air or filling that will escape (If this sounds confusing, click here.)
5. Cover with a moist towel until ready to cook
6. Steam dumplings for about 20 minutes
Spicy soy ginger dipping sauce
1/3 cup soy sauce
½ cup water
2 tablespoons grated ginger
3 tablespoons sugar
1 tablespoon Sriracha

yummm, if you panfry them would they be potstickers, and in soup wontons? or do the wrappers differentiate them somehow…
