split pea and ham soup

Got any leftover ham from Easter brunch? Sick of ham sandwiches? How about a nice split pea soup?

This soup is definitely a main course soup, it creates an extremely thick “broth”.  The curry powder was my mom’s idea, it matches well with the carrots and doesn’t overpower the soup.  If the soup is too thick for you, thin it out with chicken broth or water.

Ingredients:

8 cups of water
1 pound of split peas
2 smoked ham hocks
1 medium onion, chopped
1 teaspoon salt
¼ teaspoon plus ¼ teaspoon black pepper
2 carrots, small chop
2 stalks celery, small chop
½ pound ham, cut into ¼ inch chunks
½ teaspoon curry powder
1/2 teaspoon hot sauce

Directions:

  1. Heat water and peas to boiling, boil for two minutes, then remove from heat and cover
  2. Let sit for one hour
  3. Add ham hocks, onion, salt and pepper, cover and simmer for one hour
  4. Remove ham hocks, stir in ham, carrots and celery into soup, cover and simmer for 45 minutes
  5. Add curry, black pepper, hot sauce, and salt (if necessary, mine needed about 1 tablespoon)
