kinda shrimp scampi

It’s hard to know another’s lips will kiss you

Finally, the last shrimp recipe. Sorry it took so long, I’ve been busy. No, really, my wife delivered our beautiful baby boy on Thursday morning.

Serves Three

Ingredients:

1 plus 2 tablespoons olive oil
½ pound spaghetti noodles
1 pound medium shrimp, shelled and deveined, patted dry with paper towel
4 tablespoons butter
5 cloves of garlic, minced
2 lemons, zested and juice of 1 lemon
2 plus 1 tablespoons fresh parsley
2 tablespoons sour cream
Salt and pepper

Directions:

  1. In large pot, boil water, 1 tablespoon olive oil, and 3 tablespoon salt, cook pasta to al dente
  2. Meanwhile, in a medium pan, heat 2 tablespoons olive oil over medium-high heat
  3. Season shrimp with salt and pepper, cook in a pan until just pink on both sides, remove and set aside (shrimp will not be fully cooked)
  4. In the same pan, add butter, cook until bubbles subside
  5. Add garlic, lemon zest, 2 tablespoons parsley, cook for about one minute
  6. Add shrimp and cook until finished
  7. Meanwhile, drain noodles and return back to pot
  8. Add shrimp/garlic mixture to the noodles, add sour cream, and lemon juice
  9. Season with salt and pepper, garnish with 1 tablespoon parsley

shrimp risotto

Ingredients:

3 tablespoons olive oil
2 large shallots, small chop (1/2 cup)
1 medium red pepper, chopped
1 cup Arborio rice
½ cup white wine
4 cups shrimp stock (maybe more, maybe less)
3/4 pound medium count shrimp, cut into 3 pieces
½ cup parmesan
¼ cup heavy cream
1 tablespoon butter
Green onion tops for garnish
Salt and pepper

Directions:

1. In a medium saucepan, bring shrimp stock to a simmer
2. Meanwhile, in a medium stock pot, heat olive oil on medium heat
3. Add the shallots and red pepper, cook until translucent shallot is transluscent
4. Add the rice and cook for 2 minutes more, stirring until nicely coated
5. Add the wine. Slowly stir, allowing the rice to absorb the wine
6.  Once the wine absorbed, add 1/2 cup of stock
7. Continue to stir and add 1/2 cup of stock every time the liquid gets absorbed, about 20 minutes
8. Mix in parmesan cheese and heavy cream
9. Stir until the shrimp become pink, season with salt and pepper
10. Stir in butter
10. Garnish with green onion

shrimp stock

All your love is gone

Sorry for the delay, this recipe will be used in a shrimp risotto.

Ingredients:

3 tablespoons olive oil
2 pounds uncooked shrimp shells (heads if you can get em)
1 medium onion, large chop
2 carrots, large chop
2 stalks celery, large chop
2 cloves of garlic, crushed
6 c cold water
1 lemon, cut into slices
2 bay leaves
2 sprigs of fresh thyme
1 tablespoon black peppercorns

Directions:

1. Heat oil in a large stockpot over medium-high heat
2. Add shrimp shells and cook for about 10 minutes
3. Stir in the onion, carrots, celery and garlic
4. Add water, lemon slices, bay leaves, thyme and peppercorns
5. Bring  a boil, reduce heat and simmer for about 30 minutes
6. Strain into a clean container

Ingredients:

6 tablespoons ketchup
2 tablespoons horseradish (or more if you want a real kick)
½ lemon, juiced tablespoons lemon juice
3 drops of hot sauce
1 teaspoon Worcestershire
Pepper to taste

Directions:

1. Combine all of the ingredients

shrimp cocktail

Cocktails tore up my family

Cocktails tore down my home

I cheated and I lied, I swallowed my pride

And then, washed it down with cocktails

Actually, this is a pretty nice shot…cocktail sauce tomorrow.

Ingredients:

1 pound of shrimp (or more)
3 tablespoons salt

Directions:

  1. Fill a medium pot about ¾ full with water
  2. Add salt and bring to a rolling boil
  3. Add shrimp cook until water comes back to a boil
  4. Remove shrimp and place in medium sized bowl filled with ice water
  5. Once cool, pat dry with paper towel and serve with cocktail sauce
