pineapple chutney

I thought this would be good on a grilled ham and cheese, I was right.

Ingredients:

1/2 yellow onion, chopped
1/3 cup honey
Juice of half a lime
2 cloves of garlic, minced
1 teaspoon fresh grated ginger
2 (20 oz.) cans chopped pineapple, drained
1 tablespoon brown sugar
1 tablespoon curry powder
1/2 seeded jalapeño, minced
1/2 cup white vinegar
1/2 teaspoon plus 1/2 teaspoon salt
2 tablespoons raisins

Directions:

1. Combine all of the ingredients except 1/2 teaspoon of salt and raisins in a medium pot
2. Bring contents to a boil, reduce to a simmer
3. Cook until thickened and most of the moisture has evaporated, about 30-40 minutes
4. Mash with a potato masher or stick blender
5. Add raisins and 1/2 teaspoon of salt, let cool, serve with pork or chicken
